Le Rustique Camembert Open Sandwich with Pickled Red Cabbage, Apple & Mixed Seeds

Ingredients
  • camembert le rustique

    1 Le Rustique Camembert 250g

  • ¼ red cabbage 
  • 10cl cider vinegar 
  • 1 tbsp coarse salt 
  • 1 apple
  • 8 slices bread (brown, wholemeal, seeded or any kind you like) 
  • 2 tbsp mixed seeds (pumpkin, sunflower, sesame, etc)
  • ½ bunch chives, finely chopped 
  • 2 tbsp olive oil 
  • salt, pepper
Preparation
  1. Slice the red cabbage very finely and place it in a large bowl.
  2. Bring the vinegar to the boil and pour it over the cabbage. Add the coarse salt and leave it to pickle for about 15 minutes. Drain and rinse the cabbage, squeezing well to get the water out.
  3. Cut the apple and Le Rustique Camembert into pieces.
  4. Place a bed of red cabbage on each slice of bread, then arrange Le Rustique Camembert and apple pieces on top. Sprinkle with seeds and chives, season to taste and drizzle with olive oil before serving.
