Each to his own knife!
If you are serving several cheeses on the same board, it’s best to have a separate knife for each. The flavours in cheeses can be so different, cutting them all with the same knife can alter the taste. For Le Rustique cheeses, use a knife with cut-outs that cut soft cheeses without them sticking to the blade. The curved knife with two prongs can also be used for cutting your cheeses.
